Why Natural Processing Changes Everything
How one of coffee's oldest processing methods creates some of its most expressive flavours.

Before coffee reaches the roaster, one decision can fundamentally shape what ends up in the cup: how the coffee cherry is processed.
Natural processing is one of the oldest methods.
Instead of removing the fruit immediately after harvest, the whole coffee cherry is carefully dried with the seed still inside. During this time, the coffee remains in contact with the fruit surrounding it.
The result can be remarkable.

Fruit, sweetness and character
Well-executed natural coffees are often known for their intense sweetness, fruit-forward character and complex aroma.
Depending on origin, variety and fermentation, the cup can reveal notes reminiscent of ripe berries, tropical fruit, stone fruit or florals.
But natural processing isn't simply about creating fruity coffee.
It requires precision.
The cherries must be picked at the right stage of ripeness, dried carefully and monitored throughout the process. Poorly controlled drying can overpower the character of the coffee rather than reveal it.
When done exceptionally well, however, natural processing can produce coffees with extraordinary depth and individuality.

More than a processing method

We don't choose a coffee simply because it is natural, washed or experimental.
